Busy Thoughts All Dancing Around In My Head

Hello Loves!

I hope everyone is doing well and enjoying some wonderful foods. I have been! Sadly, I haven't been documenting much. You'd think that camera that Matt got me for Christmas would be helping. I really need to crack that thing out of my purse and take it on several daily spins.

So, what's new with me?
Well....I've been doing a lot of soul searching, researching, talking to loved ones, etc. I have decided that I want to pursue a career as a Registered Dietitian. What do you all think? While we are on this topic, are any of you RDs? Who knows?! It's worth askin'! Anyway, this is going to take a big leap of faith. I am ready for the challenge or, at the very least, ready for the phone call to make an appointment with the school(s) I'm looking to attend. Anyway - thoughts on this?

2 Tbsp. Cedar's Roasted Rep Pepper Hommus
1/4 Cup Hunt's Basil, Garlic & Oregano tomato sauce
1/4 Cup Kraft FF Shredded Mozz
1 Slice Sargento Reduced Fat Colby-Jack Slice
2/3 Cup Morningstar Farm's Sausage Style Crumbles

WHAT WHAT!! So tasty! I was very, very proud of this 5 minute creation! It was filling, scrumptious, inspiring and MORE!

Craving Chicken Parmesan? I Was ...

Being a vegetarian for nearly three years, it is pretty easy these days. I get random cravings and when I do, I go right out and try to come up with a sensible, similar substitute.

I present to you - Dinner from Tuesday (9/29/09) Night - Chik'n Parmesan

This one took my craving, twisted it in two and ripped it right outta there! GO ME!! I highly recommend this to anyone who is looking for a QUICK, LIGHT, HEALTHY, TASTY meal. Pair it up with a side salad and go to town!

What I used:

Quorn Chik'n Patties (1)
Hunt's Basil, Garlic & Oregano Sauce (1/2 cup)
Tofu Shirataki Noodles - Spaghetti Shape (4 oz. or 1/2 pkg.)
Kraft Fat Free Shredded Mozzarella (1/2 cup)
